Red Bean Zongzi 豆沙粽

Rice Dumpling Recipe

100 ml Water 水

135 g Sugar 糖

1/8 tbsp Salt 盐

20 g Cooking Oil 食用油

18 ml Alkaline Water 碱水 Buy It Now! 立即购买

Steps:

1) Preparing red bean filling:

Boil the soaked red bean, turn to low heat and cook for 2 hours until very soft. Puree the bean into smooth red bean paste using a blender. Sieve red bean paste into non-stick frying pan. Add sugar, salt, oil & slaked glutinous rice flour, mix until blended. Cook over medium heat until very thick, stirring constantly for about 15 minutes. This yields about 310g red bean filling. Prepare 20 pieces of filling (each 15g)

2.) Wrapping Zongzi:

Add alkaline water and cooking oil into glutinous rice, mix until well blended.

-Layering two leaves together and folding them up at the center of the leave on top to form a cone. Use the middle finger to make a small fold inward fold. Turn the leaf around to form a cone. Put in one spoon of glutinous rice, make a hole in the center and put in red bean filling. Top with enough glutinous rice to cover the filling completely. Hold the cone with one hand to secure its shape.
- Fold down the leave to close the cone. Press it firmly, so it will not fall apart and get a tight seal. - Fold the extra leaves to one side of the zongzi.
- Lastly, secure the shape of the zongzi with a twine.

步骤:

1.准备红豆馅:将泡好的红豆放入锅中小火煮2小时直到软烂。将软烂的红豆用搅拌机打成浆。红豆浆过筛后倒入锅中,加入白糖,盐,油和番薯粉,搅拌均匀。开中火搅拌红豆浆直到变成浓稠的粘糊状。将红豆馅捏成15g每个的小圆圆。
2,包粽子:粽叶两张交叠,卷起成漏斗状,放入一勺糯米,中间掏一个小洞放入红豆团,再加一勺糯米将馅盖住。把上方的粽叶往下压,把漏斗里的馅料压紧,将盖住漏斗的粽叶两边分别折下去然后用棉线扎紧即可。
